  2. 400 gr calamar
  3. 6 gambones
  4. 1/2 bote tomate natural
  5. 1/2 pimiento rojo

  9. 1/2 cucharada pimentón de La Vera
  10. Azafrán
  11. Aceite de oliva VE

  1. En primer lugar pelamos los gambones, reservamos los cuerpos y con las cabezas, cáscaras y patas haremos un caldo de pescado.
  2. En una olla añadiremos un chorrito de aceite de oliva pondremos a fuego medio/fuerte y rehogaremos las cabezas de las gambas y demás, aplastando bien las cabezas para sacarles todo el jugo. Una vez doradas y bien aplastadas, añadiremos 1, 5l de agua y subiremos el fuego.
  3. Pasados unos minutos, veremos como empieza a subir una espuma que debemos quitar para evitar que nos amargue el caldo. Una vez desespumado correctamente, dejaremos que cueca a fuego medio unos 10/15 minutos, colaremos y reservaremos.
  4. Limpiamos los calamares, y los cortamos en anillos. Reservamos.
  5. En una sartén grande sofreiremos la cebolla, los pimientos y el ajo. Una vez hecho esto, y estando bien rehogado todo, añadiremos los calamares y removeremos 3 o 4 min más hasta que se hagan ligeramente y se mezclen bien los sabores. Incorporaremos el tomate y media cucharada de pimentón De La Vera
  6. Rehogamos todo un par de minutos más y añadimos el arroz, removemos para unir bien los sabores, añadimos un poco de azafrán (yo he utilizado unas hebras, pero podéis usar colorante si queréis) y echamos 3/4 del caldo que teníamos reservado. Removemos bien todo y añadís sal si queréis.
  7. Iremos removiendo el arroz cada cierto tiempo durante 25/30 min a fuego medio. Si necesitáis más caldo vais incorporando el que os habéis reservado. Una vez pasado este tiempo (debe quedar meloso) incorporamos las gambas encima del arroz tapamos y lo dejamos apagado 7-8 min más.
