Hoy tenía pensado hacerme unas alubias con soja texturizada, plato muy del rollo cubano y francamente delicioso. El problema? Es como un estofado, calentito, picantón...y estamos a 40°C. Cuando rompa a hervir, echaremos la soja texturizada, coceremos a fuego medio de 7 a 10 minutos. Esto es no solo para hidratar la soja, si no para que tenga sabor. Solo en agua esta sosa.
- En un plato(mejor hondo) se echan las alubias lavadas y escurridas, la cebolla roja picada, los cherrys partidos, y la lechuga troceada.
- Una vez acabe la soja de cocerse, la escurrimos bien, pero sin aplastarla demasiado. No tiréis el caldo! Está buenísimo, sirve para otras recetas, incluso para tomar una sopita de fideos más tarde.
- Incorporar la soja al plato con el resto de ingredientes. Ahora vamos a echar sal, el jugo de una lima, un chorrito de aceite de oliva y cilantro picado(opcional pero recomendable). Y ya esta! Listo para comer! Me ha sorprendido lo rico que estaba, fresquito y saciante.
